    "On the Road" at the 2026 James Beard Media Awards, Chicago

    Today on our episode #442 of All in the Industry, Shari Bayer has a special “On the Road” show on the 2026 James Beard Media Awards, which took place in Chicago on Saturday, June 13, 2026 at The Art Institute of Chicago, which was the first time the Awards were held at this venue. 

    The Awards, which highlight excellence in Books, Broadcast Media and Journalism covering food or drink-related content, were hosted this year by Andrew Zimmern, a James Beard Winner, Chef, Writer, Emmy-Winning Creator, Cultural Anthropologist, and our past guest on episode #380.  This event preceded the Impact Awards and Restaurant & Chef Awards, which Shari covered for the 6th time on the red carpet and in the media room, and we will be broadcasting that show soon.  Also new to this year, the Awards were presented by American Express and Resy.

    Manu Buffara, Restaurante Manu, Curitiba, Brazil

    Today on our episode #441 of All in the Industry, Shari Bayer's guest is Manoella "Manu" Buffara, Chef & Owner of Restaurante Manu in Curitiba, Brazil, which features a tasting menu inspired by Manu's story, staff and suppliers. Dedicated to a farm-to-table approach and fresh products concept, Manu ranks sustainability high among her priorities, working closely with local producers to create a seasonally paired tasting menu with a strong focus on plant-based dishes.

    Since its first year of operations, Restaurante Manu has garnered many accolades, including being consistently ranked on Latin America’s 50 Best Restaurants Awards, most recently being named No. 80 in 2025.  ln 2018, Manu received the prestigious ‘One to Watch’ Award, and in 2022, Latin America’s Best Female Chef Award.

    Manu has been involved in sustainability actions aimed at causes since her restaurant opened in 2011, such as preserving native Brazilian bees and incentivizing young producers not to abandon the areas of fishing and agriculture in Paraná. Since 2016, she has participated in the Urban Gardens project with the city government of Curitiba.

    Manu is the author of Manu: The Recipes and Stories of my Brazil (Phaidon, 2023), where she tells the story of a culinary career founded on a commitment to indigenous ingredients and underserved communities, as showcased within her restaurant. She is also a contributor to Shari's book, Chefwise, which was also published by Phaidon in the same year.

    Shari was thrilled to dine at Restaurante Manu in Curitiba before sitting down with Manu to hear her story, and spend a few days exploring her city with her and her team, and an intimate group of international culinary journalists.     "On the Road" at North America's 50 Best Restaurants 2026, New Orleans

    Today on our episode #440 of All in the Industry, Shari Bayer has a special “On the Road” show on North America’s 50 Best Restaurants 2026, sponsored by S.     Matt Orlando, ESSE, Copenhagen

    Today on our episode #438 of All in the Industry, Shari Bayer's guest is Matt Orlando, chef and owner of ESSE in Copenhagen, Denmark, his latest restaurant focusing on Regenerative Organic practices in farming as its starting point. Shari was thrilled to be on location at ESSE in early February to chat with Matt about his career and new restaurant, and get to experience dining there as well. (4:28)
    A California native, Matt worked at some of the world’s most decorated kitchens, including Aureole and Per Se in NYC, and Noma in Copenhagen, where he was the restaurant’s first chef de cuisine before opening his sustainably-focused, fine dining restaurant, Amass, in Copenhagen in 2013 along with wife Julie. 
    After an impressive 10-year run, Amass closed in 2022; and that same year, Matt embarked on a new project, opening AIR (Awareness, Impact, Responsibility) in Singapore, where he applied his conscious cooking to a tropical palate of ingredients. He returned to Copenhagen to open his dream restaurant, ESSE, which name means “to be" or "to exist" or "to self-reflect,” expressing the circular cuisine that has been at the core ethos that he has been championing throughout his career.
    Matt is also the co-founder of Endless Food Co., focusing on food system sustainability and its alternative chocolate, THIC.  In addition, he is a contributor to Shari's book, Chefwise, and a past guest of our show – episode #213 (April 2019).
