After years of pop-ups and collabs (which he's still doing a ton of) he opened Emmett in 2025, and just recently returned from a trip to the James Beard Awards. His next move: a tasting menu experience fueled by fire.
With his managing partner Julian Van Der Tak, they're opening Jean upstairs from Emmett. Evan gives us the first details on Jean, and recaps his experience at the James Beard ceremony and what the nomination means to him. Eli explains why he loves the adrenaline of a slammed dinner service, and everyone shares a round of Best Bites (with a few different stops to find freshly baked bread).
